Very much a variation on a theme from my previous recipe on Kale with Bacon & Mushrooms but this recipe will give you a good boost to start your day. This recipe is rich in iron and vitamins along with a good helping of protein and fat to keep you going. I made it this morning, admittedly on a day off, but it’s kept me going for over 4 hours and I haven’t got any ‘pre-lunch cravings’. It may seem like a lot to do but if you watch the clock it really doesn’t take that long to do. I would recommend making this and then getting ready otherwise your clothes may smell like bacon (if that’s what you like to smell like them please ignore).
Big Breakfast Kale
Preparation to Plate: 8 Minutes
Serves 1 person
Consume within 1 day
Ingredients:
125g (just over ½ a bag) Kale
3 Rashes of Bacon, chopped/snipped
4 Medium Mushrooms, sliced small
1 Zucchini/Zucchini Core, sliced into half discs
2 Eggs
Olive Oil
Dried Sage
White Pepper
Recipe:
Add a small amount of olive oil (1tsp approximately) to a large and small frying pan. In the large frying pan add the bacon bits, mushrooms and dried sage, in the small one add the two eggs (alternatively scramble them or if you have some extra time you can poach them if you want). Keep going around the edge of the eggs whilst they cook over a medium heat.
Once the bacon and mushrooms are cooked, put them in a separate bowl, turn up the heat, add a bit more olive oil and add the chopped zucchini. I had a zucchini core left over from some Zucchini Noodles I made a while ago so I added that but you could just as easily add a whole courgette. The left over bacon fat in the pan will help to crisp up the zucchini quickly; these cooked in about a minute. Add the zucchini to the separate bowl with the bacon and mushrooms. Add a bit more olive oil to the pan and add the kale.
Once the kale is cooked down, add the bacon, mushrooms and zucchini, mix together and then put the fried eggs on top. Season with white pepper and serve with a nice cup of green tea or orange juice. Now relax and get ready to start your day on a high.
Remember if you’re already late, skipping breakfast won’t improve the fact you’re already late. Don’t ruin your day by skipping breakfast, it’s never worth it. I know if I do, I feel terrible.

For more ideas on what to do with zucchini: try sauteing it in some grass-fed butter, and then doing scrambled eggs around the zucchini. It cooks in to eggs really well!

For a commercial brand, I would start with Kerrygold. They do a really good job, their butter is tasty, quality, and not terribly expensive. Once you’re in the practice of using them, you can venture to a local farm and see if you can get some locally. That’s when you’ll get the best flavor!

Kale is a breakfast staple in my household! I wouldn’t have thought to add the mushrooms but this seems like a nice addition. Thanks for the idea. 🙂
