Cajun Baked Salmon

Firstly this isn’t really a ‘recipe’ as such, it’s more a way to quickly make a great tasting dish that goes well with practically anything, and is very useful to making paleo in a hurry. Many a time I have been running late and need to quickly add some protein to my food (always handy to keep some cold roasted veg in the fridge). This is an easy way to spice up your salmon.

Cajun Baked Salmon

Preparation to Plate: 18 min

Serves 1-2

Consume within 2 Days

Ingredients:

2 Salmon Fillets

Olive Oil

Cajun Shake Mix

Black Pepper

Recipe:

Preheat the oven to 200ºC (the time it takes to heat up the oven is included in the ‘Preparation to Plate’ time). Place some greaseproof paper on a baking tray and place the salmon fillets on it (skin side down). The greaseproof paper will prevent the fish from sticking to the tray (even if it’s a non-stick baking tray) and make washing up that much easier.

Drizzle over a line of olive oil over the top of each of the fillets and shake over the Cajun spices, ensure it’s an even sprinkle, you don’t want it caked onto the salmon. Grind some black pepper over them and place in the oven for 12 minutes.

If eating straight away, serve hot on a plate with roasted veg and Cauliflower Rice for a tasty supper. If you’re taking it on shift with you then allow to cool and add to Tupperware.
